Where the warmth of the bakery meets the craft of the brewery — locally sourced ingredients, traditional methods, and a groundhog who watches over it all.
Our Story
Neon Groundhog Brewery started with a simple question: why keep the brewery and the bakery separate? On the same stretch of Mohler Road in Grand Rapids, we decided to bring both traditions under one roof — because the best sourdough and the best stout have something in common. They both take time, patience, and the right ingredients.
Every batch is small. Every loaf is hand-shaped. We source our grains from Ohio farms and our hops from growers who treat their land the way we treat our recipes — with care and respect. The result is beer that tastes like this place and bread that tastes like it belongs at your table.
The Brews
Our taps change with the seasons. Here are the staples you'll always find — and the limited releases worth waiting for.
Balanced caramel malt with a clean, bitter finish. Our flagship — the beer that started it all.
Roasted coffee and dark chocolate. Brewed with locally milled oats for a velvety mouthfeel.
Citrus and pine from Cascade hops. Light, crisp, and easy enough for a summer afternoon.
Wild-fermented with local wildflower honey. Tart, slightly sweet, and refreshingly unexpected.
Juicy tropical fruit notes from a dry-hop bomb. Hazy, bold, and our most popular seasonal release.
A clean, lager-style pilsner with a subtle floral hop character. Brewed for cold nights and warm company.
Available styles vary by season. Ask about our current tap list when you visit.
The Bakery
Our ovens fire up at 4 a.m. every morning. The bread is ready by opening time — and it's still warm when you leave.
48-hour fermented wild starter. Crisp, thick crust with an open, airy crumb. Our most-requested loaf.
Laminated by hand, folded seven times. Flaky, golden, and made with European-style cultured butter.
Dense, tangy, and studded with sunflower, flax, and caraway. Pairs beautifully with our stout.
Olive oil-rich, dimpled, and topped with fresh rosemary and flaky sea salt. Best served warm.
Rich, tender, and slightly sweet. Perfect for burgers or sandwiches — or simply buttered and enjoyed.
Traditional lye-dipped, coarse-salted, and served with our house-made beer cheese mustard.
All baked goods are made fresh daily. Quantities are limited — we sell out.
The Pairing
We don't treat the bakery and the brewery as separate businesses. They inform each other. The rye in our seeded loaf was milled from grain we dry-hopped into our stout. The sourdough starter has been fed with wort from our amber ale batches for years.
When you sit down at our counter, you're tasting the same land, the same season, the same intention — expressed in two different ways. That's the point.
